- 1 zucchini, sliced into half-moons
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano

- 1/2 cup crumbled feta cheese
- 1/4 cup pitted kalamata olives
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh parsley, chopped, for serving
Instructions
- Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
- In a large bowl, toss the chickpeas, cherry tomatoes, red onion, zucchini, and garlic with 1 tablespoon of olive oil, the oregano, smoked paprika, salt, and pepper. Spread the mixture across a large sheet pan.
- Season the chicken thighs with salt, pepper, and the remaining olive oil, then nestle them among the vegetables on the pan.
- Roast for 25 to 30 minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the vegetables are tender.
- Scatter the feta and olives over the pan for the final 5 minutes of cooking.
- Squeeze the lemon juice over everything and top with fresh parsley before serving.
Note: Swap the chicken thighs for chicken breast or firm tofu if you prefer, just adjust the roasting time down slightly for breast or tofu since they cook faster than thighs. Leftovers keep well in the refrigerator for up to 3 days.
